Huevos Rancheros at Grow In Macon: I Ate Until I Hurt (and then I ate cake, too)

Holy. Smokes. Almighty.

I’m really glad Saralyn, owner of Grow in Macon, and her boyfriend, Eli went to Colorado not long ago. Because they came back AND MADE THIS DISH. It says on the menu that it was inspired by their trip to Colorado. I didn’t get the story behind it, but I love Huevos Rancheros anyway and knew I wanted to go.

Glad I did because they sold out that day!

In case you don’t know what huevos rancheros are, they are a popular Mexican breakfast dish and according to Wikipedia they are typically made of fried eggs, corn tortilla, tomato-chili sauce, and many times are also served with refried beans or avocado.

The last time I had really good huevos rancheros was at Dovetail, so when I saw that Saralyn added them to her menu at Grow I was super stoked. And for good reason.

Two farm fresh eggs cooked to order, corn tortillas, seasoned ground beef, pico de gallo, cheddar cheese, sour cream and cilantro served with chips. My side was a yellow rice and black beans.

Before I speak of the main dish, that rice and black bean combo was amazing. The rice had a nice chewy quality, not overdone, and black beans are always a favorite of mine. #Yum

I got my eggs cooked over easy upon Moriah’s recommendation. I don’t do that often because we never ate eggs like that growing up and the runny eggs sometimes bug me. But it was perfect with this. The eggs were cooked perfectly and blended with the pico de gallo and seasoned beef. Also- the seasoned beef was just so good. Beautiful. I got all the way through the first helping and was well though the second one before I realized I had sour cream and cilantro on the side. I was so excited and happy I had forgotten about that part! So I dipped my fork in and tried it with my next bite. So good. So good.

So good. So full.

And then I still ate cake.
