Two Of The Best {Crock Pot} Meals Ever
I would have never thought how much the crock pot could save my life. Literally. I say this because the crock pot many times has saved my sanity for eliminating having to worry about cooking a good meal for myself and my family.
I am thinking of this as I see many of my friends having babies, and it was after all when I was on maternity leave that I first truly discovered the joy of the crock pot meal. My grandmother gave me a 5 ingredient Crock Pot recipe book, and there is literally one recipe which has stood the test of time over and over again. So much so that I have memorized it and even been able to make adjustments to it to make it healthier.
Taco Chili Soup
The Ingredients:
- Ground beer of some kind, I used to use deer meat when I had access to it
- Two 8 ounce cans of kidney beans, but I will also use black beans or fresh beans if I have access to them
- Two 8 ounce cans of corn, again if you can use the fresh kind this is even better
- Two 8 ounce cans (sense a pattern here?) of crushed tomatoes, and again if you can dice and chop up enough fresh tomatoes it’s even better, but you could even add in some kind of peppers here
- 1 taco seasoning packet, but again any kind of seasoning would work
- Add water as it heats
You will want to cook the ground beef first! Then add everything together in the crock pot and let it sit all day if you can on low. Done!!!! EASY.
Really, you could add any kind of veggies that you want and make it more like a gumbo of some kind. This is one of the best meals I’ve ever made in the crock pot, and it also freezes well.
Crock Pot Pork Tenderloin
Another super easy meal. Take about a pound of a pork tenderloin, and honestly any size would be fine just adjust how much BBQ sauce you use. And then use:
- 2 eight ounce bottles of Macon’s own Mrs. Griffin’s BBQ sauce
- 1 bottle of Sticky Finger’s Sweet BBQ Sauce, added to taste
Literally, put the pork in the crock pot and drench with the Mrs Griffin’s BBQ sauce and then add the sweet sauce to taste. I like to let it cook for about 6 hours if the pork is still frozen, a little less if fresh. If you have a few pounds of pork then of course adjust how long you are cooking. Besides, there’s not much better than smelling the house cooking yummy food- right?!
