The Easiest Summer Salad Ever
I have a love hate relationship with Southern summers. I hate the heat- unless I can get in a pool, which thankfully my boyfriend is gracious enough to let my kids and I use his whenever we want. But I LOVE the vegetables that my summer gardens produce.
This also means I often end up with an abundance of cucumbers and tomatoes, but not just any tomatoes- the large ones seem to generally elude my growing capabilities. (Although I’m hoping my yearlong use of Secondhand Soil’s compose will help that change this year.) So I usually end up with a TON of the smaller tomatoes. This means I’m always looking for ways to use them in new and tasty creations. I’ve made salsas, tomato pies, and more. But I think this is my easiest creation to date.
Cut up cucumbers into slices, and fourths. Cut your small tomatoes into halves. Now add small chunks of avocado and peaches, yep I said peaches! I’m a big fan of local favorite Dickey’s Peaches. Next I used a Champagne dressing from Kroger, this particular one I chose because it had a white wine base and I thought that along with the champagne, vinegar, tamari and garlic would add just enough tang without being overpowering. And I was RIGHT.
All this to say, I’ve had this salad two days in a row for my lunch at work and I love it. It’s filling without feeling heavy, and is a great way for me to add more of my summer veggies from my garden to my actual plate.
