Taco Trucks on Every {Southern} Corner
Who would have known that tacos and tamales are such a Southern food?
Well my friends, they are.
The Southern Foodways Alliance has documented tamales, specifically, in great detail- especially on how they came to the Mississippi Delta and subsequently evolved.
“As it turns out, there are as many stories about how Deltans acquired tamale recipes as there are ways of making them. Still, a Delta-style tamale is quite a specific thing. Connoisseurs know that a tamale from the Mississippi Delta is smaller than Latin-style tamales, is simmered instead of steamed, has a gritty texture from the use of corn meal instead of masa harina or corn flour, has considerably more spice, and is usually served with juice that is the byproduct of simmering. Today, some even fry their hot tamales,” from the Southern Foodways Alliance.
Tacos, also, have become quite the Southern staple. When I asked friends on my Facebook page for the BEST tacos and tamales in the South I got a variety of answers.
