A Light and Refreshing Cocktail: Le Cocco Glassato

The inspiration for this tasty beverage hit me while I was in the frozen foods aisle.  It’s just barely gotten into the new year and here I am staring down a Pint of Ben and Jerry’s, questioning everything I thought I knew about my personal resolve.  Then it hit me, what about Gelato?  It’s no Chunky Monkey, but when I make it from scratch using fresh lemon and coconut, it’s a pretty solid competitor.  With our resolutions in mind, I give you my favorite healthy dessert modified for the sake of potability.  The airy foam from the egg white mimics the light creamy quality of a good gelato.  Meanwhile, the organic coconut water and Stevia Syrup give the drink a floral quality that rewards your taste buds with the savory sweetness it craves; sans the shame.

Le Cocco Glassato {The Frosted Coconut}
1.5oz Smirnoff Lemon Sorbet Light Vodka
0.25oz Lemon Juice
0.25oz Lime Juice
1oz 2:1 Stevia Simple Syrup
1 Egg White
1oz Zico Organic Coconut Water
1 barspoon Coco Lopez Cream of Coconut
Tonic Water
~Combine Vodka, Lemon Juice, Lime Juice, Stevia Syrup, Egg White, Cream of Coconut, and Coconut Water in your shaking tin
~Dry shake {without ice} first, to break apart the proteins in the egg white, for about 10 seconds
~Add ice and shake until almost too cold to hold, about 30 seconds
~Strain the mixture from the shaking tin into a Collins style glass
~Next top with tonic until foam extends near the top lip of the glass
~Add about 0.5oz of Tonic to your mixing tin and swirl it around to pick up as much residual foam as possible, then add to top of glass.
~Garnish with a lime wheel & Enjoy.
How to Make Stevia Simple Syrup:
1} Take 2:1 parts of Stevia to Water {Example: 0.5 cups of Stevia to 0.25 cups of Water} and combine in a small sauce pan.
2} Raise to low/med heat and stir to combine.
3} Allow to cool and then reserve for later use
